Roast Level: Medium

Dorian is our medium roast, which uses the same bean as Lydian, our light roast, but takes it just a shade darker to add some developed flavors like brown sugar or hot chocolate, while lowering acidity. This roast is also best for modern espresso with milk drinks.

Mondul Estate is located within the Masai community on the slopes of Mount Monduli where an ideal microclimate and rich volcanic soils contribute to their coffee’s unique yet quintessentially Tanzanian profile. Founded in 1931, with new ownership in 2007, Mondul Estate aims to pair traditional methods with modern practices, with an emphasis on
sustainability, technology and community.


The estate uses bio fuels and recycled compost wherever possible, investing in modern technology to measure and manage water usage, for example. Farm staff are of the local Masai community and live on the farm; during the harvest 250 pickers from neighboring villages come for work, receiving pay, meals, and accommodation. Schooling, medical
services, pension lands, and sports facilities are also provided.

Our Coffee Philisophy

Here at The Collab we like to think about coffee a little bit differently. We like to focus less on roast level and more on other things, like variety, country of origin and process. All things that ultimately culminate in the tasting notes. The roast level is still visible on the bag but we encourage you to base your purchase more on other factors.

To make coffee buying easier we have made three different categories for our coffee, Lydian, Dorian and Locrian. The categories are grouped around similar flavor profiles, not just roast level. Since not every coffee is available year round, these categories will help you find a coffee you are sure to love when your favorite coffee is out of season
